Fixed kitchens, mobile-kitchen rigor
Building a kitchen into a room is a different job from building one into a trailer, but the constraints rhyme: the equipment schedule drives the ventilation, the ventilation drives the mechanical and the fire suppression, and the health department has opinions about every surface you touch.
We take on commercial kitchen build-out work for restaurants — layout, stainless fabrication, ventilation and equipment installation — and we plan it the same way we plan a truck, around the inspection and around the way a line actually runs during service.

What we go through with you
Restaurant build-out scope varies a lot from job to job, so this is the conversation rather than a fixed package. Tell us what your project needs and we will tell you plainly which parts we take on:
Line layout
Equipment schedule and station arrangement planned around your menu, your covers and the way the line has to move.
Stainless fabrication
Counters, tables, shelving and custom stainless pieces made to the dimensions the room actually gives you.
Ventilation & suppression
Hood sizing, make-up air and fire suppression planned against the cooking equipment rather than retrofitted around it.
Equipment installation
Getting the specified equipment in, connected and positioned so the line works as drawn.
Plan review support
Design and documentation aimed at getting through plan review and inspection instead of around it.
Sequencing
Working out the order the work has to happen in, so you are not waiting on a hood to install a wall.
Why build with us
Inspection-led design
The same discipline that gets a mobile kitchen through a health and fire inspection, applied to a fixed one.
We fabricate, not just install
Custom stainless made to fit the room means fewer compromises where an off-the-shelf piece would not quite land.
Chicago-based
The shop is here, which makes site visits and revisions a short drive rather than a shipping problem.
One shop for both
If you run a restaurant and want to add a truck, or the other way around, it is the same team and the same standard.
How it works
Five stages, start to keys
A build is a big purchase from a shop you may not have met. Here is the shape of it, so you know what happens next at every point.
- 1
Consult
You tell us what you want to sell, where you want to sell it and what you are starting from — a truck you own, nothing yet, or somewhere in between. We ask a lot of questions at this stage on purpose. This is also when to raise financing, because it changes the shape of everything downstream.
- 2
Design & quote
We work out the equipment schedule and the layout around your menu, and check it against what your jurisdiction expects. Then you get a written quote for that build. No published price list, no ballpark that quietly moves — a quote for the unit we just designed with you.
- 3
Build
Fabrication and outfitting in the Chicago shop: framing and subfloor, the cooking line and its ventilation, water and waste, electrical, interior finishes, service window and exterior wrap. If you are local, come and see it on the floor — we would rather you did.
- 4
Permits & inspection
The unit is built to the health and fire standard from stage two onward, so this stage is about readiness rather than rescue: making sure what was drawn is what is installed, and that you know what your inspector will be looking at.
- 5
Delivery
You take the unit. Local clients collect from the shop; out-of-state clients get a delivery arrangement worked out during the quote, so it is settled long before the build is finished.
Restaurant build-out questions
Do you handle the whole build-out or just the kitchen?
Scope varies by project. Tell us what your job involves on the quote request and we will be straight with you about which parts we take on and which you will want another trade for. We would rather scope it honestly than take on something that stalls your opening.
Can you work from a plan my architect drew?
Yes. Send it with your quote request and we will review it against the equipment schedule and tell you what we see.
Do you do build-outs outside Chicago?
Mobile units we build for clients nationwide. Fixed build-outs are a different logistical animal — tell us where the space is and we will tell you honestly whether we are the right shop for it.
What does a kitchen build-out cost?
There is no list price for this work, and we do not publish ranges that would be wrong for your room. Send the scope and we will quote it in writing.
