Trailer or truck?
A trailer usually buys you more usable kitchen for the money, and it decouples the kitchen from a vehicle — if the tow vehicle breaks, the kitchen doesn't. The trade is that you need somewhere to park it, something to pull it, and a plan for setup at every service.
A truck is self-contained and faster to deploy, which matters if you are moving between lunch spots. If you are anchored at a lot, a brewery, a market or a festival circuit, a trailer often wins. We will tell you honestly which one fits what you described, including when that means talking you out of the one you came in asking for.

What we go through with you
Trailer builds are quoted custom like everything else. These are the areas we work through before the quote is written:
Trailer & running gear
Size, axle and weight rating matched to the kitchen you want inside it and to what you intend to tow it with.
Cooking line & ventilation
Equipment layout, hood sizing, make-up air and fire suppression, planned from the menu outward.
Plumbing & water
Fresh and gray tanks, sink configuration, water heating and drainage sized to your service.
Electrical & power
Generator or shore power, panel layout and circuits, planned around the equipment list.
Interior & service window
Finishes, prep and storage, and a serving setup that works for the number of people who will be inside it.
Wrap & exterior
Graphics, signage and lighting so the unit reads as your brand from across a parking lot.

How it works
Five stages, start to keys
A build is a big purchase from a shop you may not have met. Here is the shape of it, so you know what happens next at every point.

Consult
You tell us what you want to sell, where you want to sell it and what you are starting from — a truck you own, nothing yet, or somewhere in between. We ask a lot of questions at this stage on purpose. This is also when to raise financing, because it changes the shape of everything downstream.

Design & quote
We work out the equipment schedule and the layout around your menu, and check it against what your jurisdiction expects. Then you get a written quote for that build. No published price list, no ballpark that quietly moves — a quote for the unit we just designed with you.

Build
Fabrication and outfitting in the Chicago shop: framing and subfloor, the cooking line and its ventilation, water and waste, electrical, interior finishes, service window and exterior wrap. If you are local, come and see it on the floor — we would rather you did.

Permits & inspection
The unit is built to the health and fire standard from stage two onward, so this stage is about readiness rather than rescue: making sure what was drawn is what is installed, and that you know what your inspector will be looking at.

Delivery
You take the unit. Local clients collect from the shop; out-of-state clients get a delivery arrangement worked out during the quote, so it is settled long before the build is finished.
Food trailer questions
Is a trailer cheaper than a truck?
Often you get more kitchen for the money because you are not also buying and outfitting a vehicle — but it depends entirely on the size and the equipment list. We quote both if you want to compare rather than guess.
What size trailer do I need?
It comes out of your menu and your crew size, not the other way around. Tell us what you are cooking and how many people work a service, and we will tell you what length actually fits it.
Do you supply the trailer?
We can work from a trailer you already own, or source one to suit the build. Say which on the quote form under 'starting point'.
Can I tow it with what I've got?
Tell us your tow vehicle on the quote request. Weight rating is a design constraint we would rather deal with on day one than at delivery.
